Botanicals

To make our gins, wild botanicals from the mountains surrounding the distillery are hand foraged each day. They are then brought back to the distillery in hand-woven wicker baskets only a few hours after being picked to ensure we maintain their essential oils and vapours.

They are then slow distilled to tease out the delicate flavours and aromas, into small batches no more than 250 litres. The cut-points are decided batch-by-batch, using taste and smell (never timed or automated) as if each batch is the first.

Wood

Our wood program is a testament to our relentless pursuit for the most interesting and flavourful oak to age our Irish whiskey in.

We start with Irish oak sourced from the forests of Wicklow, and from there we go out into the woods of the world. All of our whiskeys are first matured in american white oak, and from there we finish in a second (or sometimes third) interesting barrel. Irish, Japanese, Spanish, French and Maderia barrels are all part of our finish process. Each impart discernible, unique and exquisite flavours.
